Breakfast: the most challenging meal of the day

Seriously, I struggle with deciding what to eat for any meal. But, for me, breakfast: the most challenging meal of the day! Part of it is because I let things get into my head. Eat protein for breakfast. Start your day with savory foods, not sweet ones. Eggs are bad for you. Eggs are good for you. On and on and on. It’s like a whirl wind of conflicting ideas in my head. People, I am not awake enough for this sort of mental processing (aka I am NOT a morning person).
Add to all of this that sometimes eggs sound absolutely disgusting to me. A girl can only eat so much toast with peanut butter. Oh, and try to avoid overly processed foods. UGH, this is why I rate Breakfast: the most challenging meal of the day! Today, I had an idea and it turned out delicious. Leftover quinoa (cold) with vanilla yogurt, cinnamon, and toasted coconut. Ok, so it wasn’t a savory breakfast, but there’s a lot of health benefits here! Let’s break it down.

Quinoa
- Plant-based complete protein
- One cup has 5 grams of fiber – helps with digestion, good for your cholesterol and helps you to feel full
- Gluten Free

Vanilla Yogurt
The benefits here really depends on what kind of yogurt you eat. A few of the top benefits of yogurt are:

I like to limit my dairy, so I chose dairy free coconut yogurt in vanilla flavor.

- Anti-inflamatory (calms any over reactions your immune system might be having)
- Aids in brain health and memory
- May even help you manage your weight
Toasted Coconut
- Boosts energy

This is not an all-inclusive list of the benefits this breakfast brings, but Wooo-eee, it sure packs a healthful punch! I think sliced bananas or berries would be an amazing addition to this breakfast. Really wish I had some in the house this morning.
